If you like cheeses that are sharp, aged and strong, this is a cheese for you!!  Cave aged to bring out a flavor like no other cheese we make.  With a sweet, yet nutty flavor this cheese is reminicent of and aged Italian Cheese with hints of Blue flavor.  With a rind that is edible, it may be too strong for some, for others it is the best part!
